Recipes from Family Health Clinic Staff: Winter 2018

Looking for a good recipe that will help you stay warm and feel full this winter? Check out the recipes our very own staff provided, below!

Taco Soup

1 lb. ground beef (browned and seasoned with preferred taco seasoning mix)

  • You can substitute ground chicken or turkey as a heart-healthy alternative

1 cup beef broth

2 cups tomato juice

1 can of corn

1 can of pinto beans

1 can diced tomatoes

1 cup diced onion

1 cup diced bell pepper

*Topped with crunched up tortilla chips (Doritos are my favorite), sour cream, shredded cheese… all to preference

  • Health hint: Go light on the sour cream and shredded cheese for a more cholesterol friendly meal

To cook: Place all ingredients in a large pot and simmer for twenty minutes or until warm!

Asparagus, Chicken and Penne Pasta

1 lb. boneless chicken breast – cut into bite-sized pieces

1 package of cooked whole grain penne pasta + 2 tablespoons of olive oil

Mix pasta and chicken in pan with:

  •             4 cloves of garlic – minced
  •             12 ounces of asparagus – cut into 1 inch pieces
  •             1 teaspoon crushed red pepper flakes
  •             salt and pepper to taste
  •             ½ cup grated parmesan cheese

Enjoy!

Homemade Cappuccino Mix

We’ll put a little disclaimer here to say that this should be used as a occasional treat! This recipe has sugary ingredients, but can be integrated as part of an overall diet. For a healthier alternative, click here.

Mix the following ingredients together:

1 c. Powdered milk

8 oz. powdered French vanilla creamer

1 1/2 c. Nestle Nesquik chocolate flavor powder

1 c. Powdered sugar

1/2 cup sugar

1/2 cup instant coffee

Cinnamon to taste

Use 1/4 to 1/3 cup per mug of hot water!
