We all think of some of our favorite fruits and veggies when it starts to become fall! There are apples and pumpkins, squash and sweet potatoes, and so much more.

Herb-Roasted Parmesan Acorn Squash

Looking for a fall side-dish that’s a little sweet, a little savory, and uses only  a few ingredients? Introducing The Real Food Dietician’s Herb-Roasted Acorn Squash Recipe! The recipe calls for just five ingredients, one acorn squash, parmesan cheese, fresh herbs, ghee (or olive oil), and basic seasonings.

Roasted Brussels Sprouts With Garlic

Slow Cooker Curried Butternut Squash Stew

Katie’s Kaulifower Keto Koncoction

Family Health Clinic of Burlington’s Katie Hancock, CMA, shared her recipe for this keto-friendly cauliflower dish.

Ingredients

  • 2 heads of cauliflower
  • 1 2 cup bag of shredded Mexican blend cheese
  • 1 cup shredded mild or sharp cheddar
  • 1 tsp garlic powder (dash more depending on how much garlic you like)
  • 1 tsp onion powder
  • 1 cup heavy cream
  • Half stick of butter

Directions

Cook cauliflower until soft in a pan of water on the stove. Drain and put to the side. In the same pot, melt the butter and heavy cream until warm, add garlic and onion powder. Mix well. Add Mexican cheese cheese until creamy. Add the cooked cauliflower to the pot and mix well. Pour in a 8 X 10 pan salt and pepper to taste. Sprinkle remaining cheddar cheese on top, cover,  and bake for 30 minutes. Remove foil and back until cheese is bubbly.

For an added bonus you can add chicken to it and make it a meal! I like using rotisserie chicken.

One way to incorporate more grapes into your diet is by using them to make a great chicken salad. This recipe from Martha Stewart is healthy, easy to make, and takes under 30 minutes to prepare!
