Our friends at the Purdue Extension Office of Carroll County sent over two healthy and easy winter soup recipes that will keep you warm and feeling good for the rest of the cold days aheads.
White Chili (serves 6)
2 T. Olive oil, divided
1½ lb. boneless skinless chicken breast halves, chopped into ½” bite size pieces (3 cups)
1 c. onion (large), chopped
1 c. red pepper (large), chopped
1 tsp. garlic clove, minced
3 c chicken broth
1 tsp ground cumin
2 tsp chili powder
3 – 15 oz. cans of Great Northern or White Kidney (cannellini) beans, drained and rinsed
1½ c. shredded Monterey Jack cheese, optional
Directions
- Heat 1 T. oil in a large pot over medium heat. Add chicken and cook until done. Remove chicken from pan.
- Add 1 T. oil, onions, red pepper and garlic and sauté until onions and pepper are tender.
- Add the chicken, chicken broth, cumin and chili powder. Cover. Bring to a boil.
- Reduce heat to low and add the beans. Cover. Simmer for 20 to 30 minutes, or until heated thoroughly.
- Pour into individual bowls and top with the cheese if desired.

Sausage, Black Beans and Corn Soup (serves 6)
PAM
1 lb. sausage
1 c. onion (large), chopped
1 c. celery (2-4 stalks), chopped
2 tsp. garlic clove, minced
1½ c chicken broth
1 tsp ground cumin
1 tsp ground coriander
10 oz frozen corn
15 oz can Mexican-style diced tomatoes, undrained
2 – 15 oz. cans of black beans, drained and rinsed
sour cream
shredded Monterey Jack cheese, optional
Directions
- In a large pot, spray with PAM. Add sausage, onions, celery and garlic and sauté until sausage is done and onions and celery are tender.
- Add the rest of the ingredients except the beans. Cover. Bring to a boil.
- Reduce heat to low and add the beans. Cover. Simmer for 20 to 30 minutes, or until heated thoroughly.
- Pour into individual bowls and top with the cheese if desired.
