Taco Soup
By Kaylee LaOrange
1 lb. ground beef (browned and seasoned with preferred taco seasoning mix)
- You can substitute ground chicken or turkey as a heart-healthy alternative
1 cup beef broth
2 cups tomato juice
1 can of corn
1 can of pinto beans
1 can diced tomatoes
1 cup diced onion
1 cup diced bell pepper
*Topped with crunched up tortilla chips (Doritos are my favorite), sour cream, shredded cheese… all to preference
- Health hint: Go light on the sour cream and shredded cheese for a more cholesterol friendly meal
