After the great response to our other recipes, the Family Health Clinic will be regularly bringing you healthy recipes. This week, Kaylee LaOrange from Outreach and Enrollment shares with us one of her favorite entrees to make when she has friends over – baked spinach provolone chicken breasts.
Baked Spinach Provolone Chicken Breasts
These chicken breasts are healthy, delicious, and super easy to make. Kaylee usually serves them with a side of brown rice or quinoa, but feel free to experiment and tell us what you like best!
Servings: 2
Ingredients:
- 2 boneless skinless chicken breasts (butterflied)
- 2 slices of provolone cheese
- 5 ounces of fresh baby spinach (or more to preference)
- 4 cloves minced garlic
- 1 tablespoon of olive oil
Directions:
- Preheat oven to 425.
- Add olive oil, garlic, and spinach to frying pan. Sauté over medium heat for 3-5 minutes on medium heat.
- Butterfly the chicken breasts (slice lengthwise down middle but not cutting all the way through).

- Place a slice of provolone cheese over each chicken breast.
- Add spinach and garlic on top of the cheese slice.
- Fold chicken in half keeping cheese and spinach tucked inside.
- Place on baking dish and bake for 30 minutes, making sure the chicken gets to 165.
