Healthy Summer BBQ Recipes

Corn Dip

Ingredients

  • 2 pkg softened low fat cream cheese (8 oz)
  • 1 sm can diced green chilies
  • 1 can drained, chopped olives
  • 1 can whole kernel sweet corn, drained (I substitute with fresh, sweet corn in the summer)
  • 1 red pepper, chopped
  • 1 envelope Ranch Dressing Mix (I actually don’t use whole pkg – apx 2/3.  taste preference only)

Mix all together and serve with tortilla chips or as veggie dip

Pasta Salad with Herb Vinaigrette

Ingredients
6 ounces uncooked whole wheat pasta, cooked, drained
1 cup chopped fresh broccoli
3/4 cup chopped tomato
1/2 cup Shredded carrot
6 hard cooked eggs (cut into wedges)

Mayo Free Broccoli Salad With Honey Yogurt Dressing

Ingredients
1 head broccoli florets, chopped (about 4 cups florets)
1 cup halved cherry tomatoes
1/2 cup sliced celery
1/2 cup sliced red onion
1/2 cup frozen thawed edamame
1/4 cup raisins
1/4 cup toasted sunflower seeds
optional: 1/2 cup cooked crumbled turkey bacon
Honey Yogurt Dressing
1 teaspoon salt
1/2 teaspoon garlic powder
1 tablespoon olive oil
1/4 cup honey
2 tablespoons apple cider vinegar
1/2 cup plain Greek nonfat yogurt
pepper to taste

California Grilled Chicken

3/4 c. balsamic vinegar
1 tsp. garlic powder
2 tbsp. honey
2 tbsp. extra-virgin olive oil
2 tsp. Italian seasoning
kosher salt
Freshly ground black pepper
4 boneless skinless chicken breasts
4 slices mozzarella
4 slices avocado
4 slices tomato
2 tbsp. sliced basil
Balsamic glaze, for drizzling

1 lb. ground beef
1 tbsp. Worcestershire sauce
kosher salt
Freshly ground black pepper
6 small tomatoes, halved
1 tbsp. mayonnaise
Lettuce, for serving
Yellow mustard, for serving

Cilantro-Lime Shrimp Foil Packs

Ingredients

1 lb. medium shrimp, peeled and deveined
3 ears corn, quartered
1 zucchini, cut into half moons
2 cloves garlic, minced
2 tsp. ground cumin
1 tsp. crushed red pepper flakes
2 tbsp. freshly chopped cilantro
Extra-virgin olive oil, for drizzling
kosher salt
Freshly ground black pepper
2 limes, sliced into rounds
2 tbsp. butter

Homemade Frozen Fruit Cups

Ingredients

  • 1/2 cup white sugar (For a healthier alternative, use ¼ c Truvia instead)
  • 6 oz can frozen orange juice concentrate, thawed
  • 6 oz can frozen pink lemonade concentrate, thawed
  • 10 oz pkg frozen sliced strawberries, thawed
  • 10 oz pkg frozen raspberries, thawed
  • 20 oz can crushed pineapple not drained
  • 12 oz or 1 1/2 cups ginger ale

Directions

Mix all ingredients except ginger ale until well blended, then add the ginger ale mixing again.  Pour into 9 x 13 pan or individual cups. Freeze at least 4 hours until slushy. (Makes apx 14 individual cup servings.) If freezing for longer – simply set cups out for about 10 minutes prior to eating to allow enough thawing to eat.

Pineapple Nice Cream

Ingredients:

1 16-ounce package frozen pineapple chunks 1 cup frozen mango chunks or 1 large mango, peeled, seeded and chopped
1 tablespoon lemon juice or lime juice
